Fresh pink grapefruit, root ginger, a touch of honey and British sugars

Fresh pink grapefruit and root ginger are blitzed together, rounded with a touch of honey, and combined with a blend of British sugars and vinegar.

The grapefruit brings its usual excellent attitude: bitter, bright, pink, and just suspicious enough of sweetness to be interesting. The ginger adds warmth and length. The honey rounds the edges without turning the drink soft.

This is the most aperitif-like of the range: citrus-led, sharp, warming and slightly dangerous-looking in the glass despite behaving impeccably.

Whisk shrub with lime juice, olive oil and a little chilli. Toss with prawns, cucumber, herbs and rice noodles.

Carrot or beetroot dressing

Process

The word shrub refers to a cocktail or soft drink that was popular during America’s colonial era. It’s a fruit syrup combined with herbs and vinegar.

We take our superbly flavoured spirits and put them through a further fermentation to turn the alcohol to acetic acid. Next we make real fruit syrups with just the right combination of herbs and spices and combine these with our spirit vinegars. The ideal way to cram oceans of flavour into a distilled non-alcoholic drink.
